Essential the success of a restaurant like Dopo is its commitment to a fluid and constant evolution. Whether small perennial changes like updating the menu daily to chart the seasons or larger course alterations like focusing on the dynamic regional cuisine of Sicily, Dopo endures by embracing change, not shying away from it.
With great excitement, we announce our newest stage. Tonight, to coincide with Negroni week, we launch our new spirits program. The Italian-inspired program will revolve around classic Aperitivi, Spritzes, Bitters, and of course, Amari. Eschewing sours and citrus-dominant cocktails in favor of bitter flavors and drinks like the Negroni and Americano, the new program will be distinctly Dopo in identity and execution: fun, refreshing, improvisational and entirely unique. We can't wait to share it with you.
To coincide with the Spirits launch, we will also dramatically expand our Aperitivi and Salumi programs. Old Adesso favorites like the Duck Liver in Scatola will triumphantly return as well as new delicacies like the amazing Cefalu anchovies that we import exclusively for the restaurant.
As sad as it was for everyone to see Adesso close shop, every great ending portends a new beginning. So we couldn't be more honored and excited to bring a bit of the Adesso spirit back home to Dopo with these amazing new programs. The restaurant is really buzzing today with all this amazing activity. It's a great time to come in and see what we're up to.
